COS practices 100% organic agriculture in its vineyards. Despite having a latitude below that of the northernmost tip of Africa, harvest occurs late. Grapes are harvested by hand as the parcels mature. Due to the nutrient poor soil, phenolic ripeness occurs very late in the season, often not until mid-October.

The grapes are all de-stemmed except 1 tank of Frappato within which a sort of sandwich is made: a layer of grapes with stems, a layer without, another layer with stems, etc. until the tank is full. The grapes are lightly pressed, and the must macerates for around 15 days. Next it is decanted into the tank and left to age on lees for about 9 months. After this point, all of the tanks are combined to create a consistent wine. After comingling, the wine is left to rest, and then it is bottled.
