Viticulture
The vineyard is located on a northwest facing hillside that is about 220 meters above sea level. This position provides a cool seabreeze which keeps the grapes protected from the hot Sicilian summers. The vineyards are farmed organically and in accordance with biodynamic principles. No herbicides or fertilizers are used since Alessandro believes that the land can manage on its own. Interference would throws off the natural balance of the land.

Alessandro´s winemaking style is simple: use only the finest grapes and good wine will happen. After spontaneous fermentation with indigenous yeasts, the wine ages on lees for six months in steel.
Notas de Degustación: Este vino blanco seco hecho con 100% Grillo cae fácilmente en la categoría de vino naranja. Se macera con el mosto y después se añeja 7 meses en barricones de castaño. Este proceso le proporciona al vino unas notas casi saladas, con un profundo cuerpo y un dejo oxidado delicioso.
