This Grand Vin is produced from old ungrafted vines (100+ years) from a single contrada (Etna´s version of ¨cru¨), Barbabecchi, only in the best vintages. As with all of Frank Cornelissen´s wines, all vineyard practices are 100% organic, but really he goes far above and beyond the minimum requirements for organic certification. Virtually all interventions and treatments in the vineyards are avoided whenever possible. This includes measures such as soil tilling and copper sulfate treatments. The grapes are harvested by hand late in the season to guarantee phenolic ripeness.

Vinification
The grapes are destemmed and lightly crushed. Fermentation is spontaneous, using only indigenous yeasts. After 60 days of maceration, the wine is transferred to large epoxy tanks (2500-7000 liters) chosen for their neutrality. The goal is to enable the wines to be as expressive of the terroir as possible.
Notas de Degustación
 Este es un vino serio que es simultáneamente poderoso, delicado y preciso. Las viejas viñas de Nerello Mascalese utilizadas para hacerlo producen uvas concentradas con aromas profundos de frutos rojos. En el paladar, la singularidad del Etna brilla ya que la mineralidad volcánica es inconfundible. Fruta, tierra, tanino y acidez forman un equilibrio perfecto que requiere de concentración ininterrumpida al degustar este vino especial.
Maridaje

Con carnes silvestres como venado, faisán, o pato. También sería delicioso con un corte de carne añejada.
