Viticulture 
The viticulture of the Marangona winery is 100% orgánica. The vines from this vineyard are over 50 years of age. In order to produce the Lugana Vendemmia Tardiva, Alessandro must wait until November to pick the grapes from the vines. This later harvest allows for the concentration of sugar and the possibility for Botrytis "noble rot" to strike. It is not possible to produce Rabbiosa every year as Botrytis can never be guaranteed. In lucky years, the grapes are hand picked when they reach varying shades of purple and gray.

For the Lugana it is more important to be in the plains than in the hills, the soil has more clay.

Vinification
Tasting Lugana Cemento alongside of Lugana "Tre Campane" is a fascinating exploration of the impact of the decisions made by a winemaker. The same grapes from the same vineyards are used in both wines, but the vinification is completely different. In the case of Lugana Cemento, the wine is fermented with the skins at low temperature, more in the form of infusion than maceration. This process lends the tannic structure and beguiling aromas that define this contemplative wine. The fermentation takes place in cement, followed by a further 8-10 months in cement for refinement before the wine is bottled.
Notas de Degustación
Al igual que sus hermanos de Lugana, goza de una frescura increíble, distinto a ellos, al estar fermentado en concreto, tiene una nariz y boca mucho más seca y compleja. Perfecto para adeptos de los vinos naturales o para quienes normalmente beben tinto y les gusta un buen cuerpo en sus blancos.
Maridaje
El maridaje clásico de Lugana es con pescados de agua fresca.  Como el Lugana Cemento tiene más cuerpo y complejidad que el Lugana típico, también iría bien con preparaciones más complejas (de mantequilla con alcaparras, por ejemplo), sushi, aguachiles, ensalada con una vinagreta atrevida.
