Organic practices are used in the vineyards. The vines are 15-20 years old. Grapes are hand harvested during the first week of September. An earlier harvest is intended to preserve the freshness of the fruit and lively acidity in the final wine.

Vinification
After pressing, the juice is transferred to steel where the first fermentation is allowed to occur naturally, without temperature control. This sparkling wine is made in the Methode Champenoise, so it is next transferred to the bottle, where the second fermentation will take place. The wine rests in bottle on the lees for at least 24 months. After the wine is disgorged, it rests in bottle for at least another three months before it is released.
Tasting notes:
Este vino, hecho con método tradicional, recuerda mucho a los Blanc des Blancs de Champaña por ser tan seco y por deleitar con su alta mineralidad, notas frescas y agudas, acidez marcada.
Maridaje
 Increíblemente versátil, como la champaña. Pero creemos que sería especialmente especial con mariscos, caviar, langosta, pollo frito o un buen grill cheese.
